The Rump steak is often referred to as the 'butchers favourite'.  Indeed in our opinion the Rump is nicely flavoured with some fat and is reasonably priced and so we as butchers often have this steak on our dinner plate.  This cut is also perfect as a stirfry or for a quick casserole.  Matured on the bone then trimmed to perfection.   All steak cuts are hung to maturity.
